Chipotle sweet potato Chickpea soup
  This is a spicy, sweet,creamy soup . perfect for cold winter nights. Super easy and vegetarian! 
1/2 red bell pepper diced
1/2 red onion diced
2 garlic cloves
1 small sweet potato. diced  (About 1-1/2 C)
2 cans of vegetable broth
2-3 Chipotle peppers from can (the more the spicier)
1 can of tomato sauce
1 can rinsed chickpeas (garbanzo beans)
3 leaves of kale (1/2 C)
1/4 cup of cilantro
Juice of 1 lime. 
1 tsp cumin 
Add all ingredients (except for the kale cilantro and lime juice) to a pot and simmer about 20 minutes. Add the kale, cilantro and lime juice to the bottom of the blender. (They blend better on the bottom). Pour the pot of soup on top of the greens in the blender. Blend until smooth. I added a dollop of plain greek yogurt to mine to tame some of the heat from the peppers.  Enjoy!
Serves 4 (2C servings) @ 215 per serving!

Hi, Mandy! Thank you! Well, I’m feeling great. Im motivated, working out like I should and becoming more and more happy with my body. Im no where near my goal but thats ok. This is a lifestyle change and it will come. Im just trying to focus on accepting myself in whatever shape or form I am. I love that im getting stronger and being able to push through workouts (even though its exhausting!) How are you doing? What are your goals? Motivations? Weaknesses? You are very pretty! And lucky! Is it warm where you are? Its still super cold here. Wish I could go out for a stroll. :( oh well. Indoor workouts are good too. Hope you’re doing well!

I’m reblogging this again because I want to add that images like this are literally 100% the only reason I feel better about my body. Because when I’m having a shitty body image day, I look in the mirror and I remember that there are people who think bodies like mine are beautiful and lovely and sexy and I give myself permission to love myself even though my body is rarely reflected in mainstream media.

They are all beautiful and sexy as hell.

Eggplant Sweet Potato Soup
1 eggplant peeled and chopped (3 cups)
1 small sweet potato peeled and chopped (2cups)
1 can glen muir fire roasted tomatoes (with juice)
4 garlic cloves
1/2 purple onion
1 can great northern beans (rinsed and drained)
4 cups of vegetable stock
1tbsp curry powder
1 tsp turmeric
1 tsp cayenne pepper
Salt and pepper to taste
Sautee garlic and onion. Add tomatoes, eggplant and sweet potatoes and broth.  Simmer 15 minutes.  Add seasoning and beans. Simmer for 20-30 minutes. (Until sweet potatoes are soft. Remove from heat. When cooled enough to handle, blend with an emersion blender or large blender. 
Makes 4 (2cup) servings = 185 cal/ serving

My therapist: Look at nature. Look at flowers. We never walk into our garden and say "Oh wouldn't that flower be so much more pretty if it were taller? Or red instead of pink?" No, we don't. Because nature was created perfect just as it is. And so are we. We are part of nature, we are how we're meant to be, we are perfect just as we are.
